Red velvet cake is chocolate cake made with vinegar and red food dye if it's modern, beet root if it's traditional. Anytime someone says "it's just chocolate cake" I always raise an eyebrow because like, how can you not taste the flavor change the vinegar makes? Thats also why it's almost exclusively paired with cream cheese frosting, because the sweet tang of the frosting goes well with the sweet acidity of the cake.
