Chestnut Buns
Ingredients
Dough
260g bread flour/high protein flour
10g cocoa powder
40g sugar
10g milk powder
135g milk
1 egg
3g instant yeast
3g salt
35g unsalted butter

Chestnut Filling
200g chestnut cooked and peeled
30g sugar
15g milk
5g unsalted butter

*The high protein flour I use contains 13g protein per 100g flour.

Steps:
1. Bring together bread flour, cocoa powder, sugar, milk powder, milk, egg, instant yeast and salt into the stand mixer bowl. Beat in medium high speed until a dough ball forms. Add in butter, and keep beating until well combined. Take a small piece of dough and stretch a little too see if it can form thin and clear film. (windowpane test).
2. Let the dough ball rise until doubled in size. Divide the dough into 8 equal weight portions. Roll into 8 round dough balls. Cover with plastic wrap and let rest for 20 minutes.
3. In a clean bowl, bring together chestnuts, sugar, milk and butter, blend until smooth and together.
4. Roll each dough ball flat, put in the chestnut mixture, wrap it up and seal the edges, shape into a triangle, pinch two angles together.
5. Dip the bottom of the dough into water, take it out and cover the bottom of the dough with sesame. Place them in a lined baking tray. Let rise until doubled in size.
6. Preheat the oven to 356℉(180℃). Brush the no sesame area with egg wash, send into the oven and let bake for 20 minutes or until golden brown.
