How do you mitigate the sourness? Every time i have foraged this and cooked it, the flavor is just lemon peels. Or bitter like a citrus IPA. Not optimal for a chicken substitute

I've found a couple suspected specimens but they were quite small, hadn't grown a full bracket yet. How quickly do they grow? I first saw them before the weekend, and checked on them Monday, didn't seem like they'd budged!
