Absolute value of the difference between attack and defense stats is a really good indicator of champion efficacy.

It seems like a defense oriented arena team might be easier to pull off for most players as well. Trying to go speed is just an arms race that doesn't seem consistently winnable. This is doubly true if you don't have an Arbiter already since the Arena requirements may very well lock you out of ever getting her if you try to match speed with speed. Assuming you won't go first and building your team around that assumption seems a lot more consistent.

re: Arena --> Which types of champs immediately come to mind for countering a team with Dutchess or a team with Seeker? for example, when I see Hege I immediately put my Maulie in my team and works well almost every time. But with Dutchess and/or Seeker, I'm never quite sure of who to use on my team even though I think I probably have some good options. Also, a video on "How to Counter a Blender" would be awesome. I've heard people say "it's easy to beat a Blender" but not sure how.

I went defense heavy and was finally able to break through to Dragon 20. It's an almost completely reliable farm now, though super slow until I can get better gear. I have no damage dealers but I'm able to survive the waves then poisons do the work on the dragon.

I recently got a grizzled jarl and a Norog, which would you suggest gearing first as i'm still early to mid game (lvl 39) and don't have alot of gear

Defense champions. Attack scales along with defense. Two characteristics scaled up with one stat. Attack champions need additional defense buffs.

With clan boss, defense aura with a defense team probably works best. Not sure, HP aura might work also, bit I think def might deliver more total damage. Early/mid game gear.
