Note for others - I learned from elsewhere that there are pasta sheets you don’t need to cook ahead of time. These are the easiest ones to use in lasagne. The packaging should tell you.

I live in north Italia, we always made lasagna without mozzarella, we use parmigiano reggiano instead. Give it a shot!
