As a Chef I can say that you can put anything you want in that dish put don't call it Paella. Call it Spanish influenced rice dish.

Spanish speaking and spanish household are not the same, I being Mexican did not have a clue chorizo did not belong in paella until searching for the real deal online, I know better now and can almost certify no one makes real paella... only Spaniard-owned joints do.

I'm spanish and lived in spain all my life. For me, if it has chorizo is not a paella anymore. It's just rice with chorizo and shrimps. And we can't call it paella also because of the type of the pan he is using for cooking it.

There are many different recipes for paella, however valencian paella or the paella from valencia city is a specific recipe that has olive oil, chicken, rabbit, tomato, saffron, smoked paprika, runner beans, butter beans, and spanish rice. Its simple.

I always go by, do what you want just don't call it "authentic" or "original". If you like Pineapple+Ham on Pizza, go for it. Your food is about you enjoying it. Paella with chorizo, go for it if you like that. Unless you're putting something on food that really doesn't go together its fine (and I mean crazy stuff like eating sausages with nutella ... yes, i've seen it)

In my experience ethnic food in the US often has very little similarity to ethnic food in the supposed country of origin. For instance kielbasa isn't a sausage, it literally means sausage. So when an American walks into a deli in Poland and asked for kielbasa they're a bit confused. Which one? There's like 98 to choose from. So when I hear "I grew up in Spanish household" I think: oh, grandpa moved there in 1750.

I lived in Marbella/San Pedro as a kid and everywhere used to put chorizo in paellas, weird to hear that it's uncommon.

This is a really strange "no no". Not only was chorizo in the original Valencian paella recipe (yes, I'm aware that style does not include shrimp), but it's a Spanish ingredient that tastes wonderful in the dish. I think some people just like to get mad about stupid things.

I have a technical question.
Is mixing chorizo together with the shrimo bad because its not authentic or does it affect the flavour in a negative way? Promise im not shitposting, just trying to learn

Authentic paella does not contain fish or chorizo and a lot of many other ingredients. So why make an authentic one when you could use ingredients to make it more flavorful like a multi michelin star chef who in a simplified recipe uses chorizo

That’s what I learned a long time ago, that you don’t add chorizo to Paella.
