The obvious choice to adapt into a board game is Mario Party. But I think there's a better choice. In Mario Party 5 there's a side mode called Card Party which is a board game where the board is made of entirely tiles that you flip over as you move around and the pieces are the characters heads on board game pieces. For a side mode it has a surprising amount of depth and doesn't get talked about enough. Check it out if you can! It's literally a board game in Mario Party 5!

The Mario Power Up Card Game is actually a really fun game if you have a bigger group of people. The rules seem a bit untested at times, but it is a great game if you like screw over other people type games.
