So, a good tip is your obsidian armor had last stand. Not kidding it saved the run, when you dropped down to 1/2 a heart your exp dropped a level. That’s last stand saving you from death. It keeps you from dying as long as you have exp.

for the end mobs in the overworld: that plains biome is probably where you first spawned, those dudes mustve fell through the portal and because the way the end portal works(it send whatever goes through it to its set spawnpoint) it mustve sent the to world spawn, cuz ynow, mobs dont sleep.

just a little tip, stock can be improved for free by combining it with bakeware in a crafting interface, it turns into dried soup which gives more hunger and saturation.
one more thing, banshees spawn in "eerie places" this includes abandoned mineshafts, so you most likely had a mineshaft under your base
ok, i'm just adding to this comment as i watch at this point but here you go: iron pet armor is 5 armor value, gold is 7 and diamond is 15
