So glad you mentioned that a lot of cakes made by professional bakers are cake mix. I was at my local Walmart Neighborhood Market about 2 years ago and saw a guy with about 30 boxes of cake mix in his buggy (yes I said buggy, I’m from rural Georgia). I looked at him and realized he was the chef/ owner of a bakery that I paid $7 a slice for cake.
