Auto ISO on a good sensor camera. Then just let the scene dictate shutter and aperture. Add in TTL flash with proper technique bouncing and using a diffuser and some post processing. All should be well

Why are you always shooting manual? If I shoot outside or in well light venue's I always shoot on AV. This saves a lot of time. Which gives an extra advantage for the "Moments happening quickly" you where taking about

@delaneymedia when you switch between 2.8 and 5.6 aperture, are you also adjusting the flash power throughout or maintaining a consistent output?
