"Caramelization" mustard has ZERO sugar. That's not 'caramelized', it's burnt. That's why it stuck to the pan like that. The onions weren't either, they were just browned a bit.

1- you didnt bother to scrape off old stuff which means a strong burnt taste (not char)
2- you didnt scrape off the 'crust' that the mustard left on so thats done and have fun getting that off the griddle
3- those onions aren't caramelized at all
4- everything is either tangy or sour, 0 sweetness to cut through it
5- big burgers should be wider, not taller
