Tapioca flour (Bột năng): 160g
Water: 320ml (Ratio 1:2 with the tapioca flour)
Minced pork (Thịt băm): 190g
Shrimp (Tôm): 100g
Cooking oil (Dầu ăn): 25g
Garlic: Minced (for sautéing)
Spring onion (Hành lá): 20g
Fish sauce (Nước mắm): 30ml (for dipping sauce)
Lemon juice (Nước chanh): 15ml (for dipping sauce)
Chili and garlic: Minced (for dipping sauce)
Sugar, seasoning powder, and pepper: To taste
Instructions:
Mix tapioca flour with water in a 1:2 ratio (160g flour to 320ml water). Stir well until smooth.
Heat cooking oil in a pan and sauté minced garlic and spring onion until fragrant. Add the minced pork and shrimp, then stir-fry until cooked.
Add a pinch of pepper, 2 teaspoons of seasoning powder, 2 teaspoons of fish sauce, and a small amount of sugar (adjust to taste)
Pour the tapioca-water mixture into the pan on low heat. Stir continuously until the mixture thickens and turns translucent.
Mix fish sauce and lemon juice in a 2:1 ratio (e.g., 30ml fish sauce to 15ml lemon juice). Add 2-4 teaspoons of sugar (adjust to taste) and minced chili and garlic.
