Warm water

--8 g / 1.5 teaspoons
dry yeast

-- 500g/ 17.63oz /4.5cups
bread flour

--10 g / 2 teaspoons

This is a lovely recipe. I had to increase the oven temp to 450 because my loaves were not browning at the temp indicated and they had to bake longer than the recommended 14 minutes. Most baguette recipes call for oven temp 450-475 and baking time of at least 30 minutes and this worked for this recipe.

I just completed my first batch. My dough didnt rise and wasnt smooth and soft like yours was after 15 mins of kneading and tuck and rolling... It was pretty heavy/lumpy and heavy when i was done kneeding it. So I left it overnight to covered. When i woke, It didn't "rise" like yours. Again not airy.

But it was the first time, so i powered on, instead of binning it in the garbage. I cut my dough it into 3, kneeded, rolled, sprayed and floured, and baked with the convection on, at 425 F for 23 minutes. I put the pyrex boiling water inside the oven, and again also sprayed water prior to putting in. When i removed it, i was very pleased....

I successfully got the color and crispness which i read others had challenges with..
That said, the dough in the middle of the baguette was thicker, and not airy. I suspect that either my dough is sub-par, or the yeast was inadequate some way? The water was warm when i added the yeast so it didnt muck it up at that point....likely a combination of the two, as I cant see it being anything else (the salt).

That said, the crust with butter and jam was excellent. Will do next round with "fast rising" yeast and another type of flour.
