Was at Costco the other day. Reminded the husband to grab some kerrygold while we were looking at books. A lady over hears us and asks if we’re doing Keto. I make Sardines Ceviche!!! I’m Mexican so I ❤️ ceviche!!!
I mash the sardines a little bit, add lime juice, diced tomato, diced cucumber, diced onion, diced jalapeño peppers, chopped up cilantro, avocado, salt and pepper! I eat it with pork rinds (in replacement of corn tostadas) and tapatillo salsa!!! Seriously so delicious 😋

Mistake skipping the Cosco vegies. I get the organic spring mix tub so much cheaper than Safeway, and I'll buy one every week. The giant bag of spinach is also so much cheaper, even if half of it goes to waste. With a family of 4, we do go through bulk vegies fairly quickly.
