How to make the viral Olympic chocolate muffins

Norwegian swimmer Henrik Christiansen has been sharing his love of the muffins in the Olympic Village throughout the games, creating incredibly fun videos about the sweet treat.
The videos have been watched millions of times, with other athletes around the village creating their own muffin content.
The muffins are made by French company, Coup de Pates and while the exact recipe for the 'Maxi Muffin with Intense Chocolate' hasn’t been revealed, keen bakers on social media have worked it out for themselves.
The recipe we’re making is adapted from Jordan the Stallion's video, with a few tweaks like using a broken-up bar of baking chocolate instead of chocolate chunks and making them cupcake size rather than giant muffin.
Recipe:
Ingredients:
¾ cup milk
¼ cup water
2 tsp instant coffee
½ cup cocoa powder
½ cup choc chunks
113g butter
2 cups plain flour
1 tbsp baking powder
¼ tsp salt
½ brown sugar
½ cup caster sugar
¼ vegetable oil 60ml
2 eggs
1 tsp vanilla
⅓ cup choc chunks
Filling:
½ cup thickened cream
¼ cup choc chunks
Pinch salt
Method:
Preheat oven to 190ºC
Put milk, water and instant coffee into a pot and simmer. Then, add in cocoa powder. Once cocoa is dissolved, add in ½ cup chocolate chunks and butter. Pour mixture into a separate bowl and let cool.
In a separate bowl, place in plain flour, baking powder and ¼ tsp salt and mix.
To the chocolate mixture bowl, add in brown sugar, caster sugar, vegetable oil, eggs and vanilla and mix until combined.
Add a third of the flour into the chocolate mixture and stir. Fold in the rest of the flour, being careful not to overmix.
Add in ⅓ cup chocolate chunks into the chocolate mixture and gently fold.
Pour muffins into a lined muffin tin.
Bake for 17 min and let cool.
To make the filling:
Place cream, ¼ cup chocolate chunks and a pinch of salt into a pot. Place the pot onto the stove on a low heat and gently stir until the chocolate has melted. Leave to cool.
Once the muffins are cool, make a small hole in the top using a straw and add in the filling.
