As an Android user, it has a settings option to just never have my read receipts on, so it'll never notify the other person

You dont need to do any of that on an android, just drop down your notifications and it still shows as delivered rather than read to the sender. You can even open the whole message without them knowing.

Or I just set healthy boundaries with people and explain that while I opened the message, I didn't have time to respond or that it was a mistake while I was trying to open another app.

You don't owe a response to anyone if you truly don't feel like replying. If they have a problem with that, get new friends who will respect your time and boundaries.
