As noted in the 12 second clip,  the simulation illustrates separation of flow around an airfoil.  The demonstration,  in a water medium, is not set up to measure velocity but rather introduce the concept of stall and lift for discussion.  While there are misunderstandings on applying Bernoulli's Principle (it doesn't work with two mediums) wing design does create lift by increasing velocity above the wing thereby decreasing pressure above the wing.  Please refer to applied aerodynamic principles in the aviation industry.
