I love biryani - a little too much ;) I often buy it or have it made by someone else so this week I decided to learn a new chicken biryani recipe. INGREDIENTS/TIPS:

For chicken Marinade (marinate for 2 hours):

12 pieces of chicken
Yogurt- 2 cups
Garlic/Ginger paste- 2 Tbs
Chilli powder- 1 and 1/2 Tbs
Cumin Powder- 2 Tbs
Salt- 1 Tbs
Food color (I used red)- 1/4 Tsp
Lemon juice- 4 Tbs

For Rice:

5.5 cups of rice (soaked for 30 mins)
11 cups of water
2 Tbs Ghee
1 Tbs salt

*Cook until 3/4th of way cooked. Rinse remaining water and let sit in a separate bowl*

*Rule of thumb: Always use 2 cups of water per every 1 cup of rice you are trying to cook*

For chicken Curry:

Olive oil- 1 cup
3 Chopped Onions
3 medium sized chopped tomatoes
3 slit green chilies
3 Bay Leaves
Chopped Parsley- 1/2 cup
Shan Sindhi Biryani Spice- 1 Tbs (optional- but tastes delicious)
Salt- 1 & 1/2 Tbs
Ginger/garlic paste- 1 Tbs
Small Ginger sliced
Food color (red)- Add 1/2 Tsp to 3 Tbs of water

*Cool chicken curry on medium heat, then high until you see oil separating from the curry- this is how you know the chicken is cooked well. While cooking, keep the curry covered with a lid and repeatedly stir when you can*
