KASHMIRI WAZWAN at a KASHMIRI WEDDING in Srinagar 🇮🇳

Today was the 4th day of the Kashmiri Wedding, which was the Dawat-e-Walima. The guests were kept limited due to Covid-19 but the KASHMIRI WAZWAN served lavishly. A very fine example of big fat Indian Weddings, focusing more on food. The Wazwan for the Walima comprised of 25-Courses, that comprised of some of the most amazing dishes cooked by this Master Chef of the Wazwan called the Waza. I got to learn the most intricate details and in-depth understanding of this lavish, grand, and exotic Wazwan. The Waza explained the uses of aromatic Kashmiri Chili and Pran or Kashmiri shallots, he also used ghee and saffron to cook the most complex and aromatic meat dishes of the Wazwan. Few dishes I got experience from scratch were, Mutton Rista, Gushtaba, Mirchi Qorma, Roghan Josh, Seekh Kabab, Waza Chicken, Tabakmaaz, Methi Maaz, Haakh, Dhaniwal Qorma, Aab Gosht, Tamatar Paneer, Dahi Mushroom all served as a royal feast in the copper TRAMI for the Royal Kashmiri Feast at this Dawat e Walima or the Kashmiri Wedding Reception.
It was one of the best food and the best experiences of my life.
