How to make Banana Nut Muffins | Homemade From Scratch

I had so much fun making homemade banana nut muffins from scratch with my son! Now I’m sure we all know how to throw down on some greens, Mac & cheese, sweet potatoes and chicken…lol. But how many of you know how to bake cakes, bread and muffins…from scratch!? Well I’m learning today and I’m so excited!🤗

Below is the recipe that I used. The good thing about this recipe is most of the ingredients are basic ingredients to start most baking recipes (cookies, cakes, breads, etc). So I can reuse most of this stuff and try out different things just by replacing the bananas with something else like carrots, apples, zucchini, chocolate chips…all kinds of stuff!😊

UPDATED (4-16-20) : Banana Nut Muffins recipe - Makes 12 muffins
**(see 2nd recipe for 6 large muffins)

3 ripe bananas
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/3 cup melted butter
1 Large egg
3/4 cup brown sugar
1 teaspoon vanilla
3/4 cup chopped walnuts
1/2 cup milk

► UPDATED (4-16-20): Recipe for 6 Large Banana Nut Muffins

2 ripe bananas
1/2 stick melted butter
1 beaten egg
1/3 cup milk
1/2 tsp vanilla
1/2 cup brown sugar
1 cup flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/4 tsp nutmeg
1/4 tsp cinnamon
1/2 cup chopped walnuts

Preheat oven to 350 degrees. I sprayed the muffin tin and lightly greased the sides with a very small amount of oil ( I was determined to not have them stick, lol). In a medium bowl we smashed the bananas. Then we mixed all the wet ingredients in that bowl (bananas, butter, vanilla, egg, milk)

In a separate bowl we mixed all the dry ingredients (flour, baking soda, baking powder, cinnamon, nutmeg, salt, sugar). Combine the dry and wet ingredients by slowly stirring with a spoon *(Please make sure not to over stir). Last we folded in the walnuts.

Evenly divide the batter in the muffin tin cups and bake for 22-25 minutes. Then enjoy!

(P.S - I do think the cinnamon and nutmeg together was a little strong. Next time I may cut those portions in half or just leave out the nutmeg and keep the cinnamon. We’ll see!)

It’s always healthier when you make your own instead of using box mix. You control your ingredients and you can identify the them 🙂

I mix a couple of dollop of sour cream in mine to moisten the mixture

Yummy! I’m making this but I have to use coconut oil bc I’m dairy free.. thanks for sharing!
