INGREDIENTS
• Cans Black Eyed Peas (Or Dried)
• 2-3 Ham Hocks
• 1 Bell Pepper
• 1 Onion
• 6 c Chicken Broth or Water
• Cajun/Creole Seasoning
• Garlic Powder
• Onion Powder

HOW TO
• Finely dice the bell pepper & onion.
• Heat heat- into a pot; add the chicken broth, the chopped veggies, & the ham hocks.
• Season to taste with Cajun seasoning, garlic powder, & onion powder (about 2-3 tsp each).
• Bring to a boil & cook down for 2 hrs with the lid on, stirring occasionally. If the broth evaporates too much, add more chicken broth or water. No worries!
• Once done, remove the lid & add in the RINSED black-eyed peas.
• Cover & let simmer for 30 mins.
• Once done- remove about 1 cup of peas, smash them, then add them back into the pot. This acts as a thickener.
• Simmer with the lid off until you reach your desired consistency. Personally, I did 30 more mins but it is up to you! :)
• Once done- remove the ham bones & skin. I usually chop the skin up & throw it back in though.
• Plate the peas & enjoy!!
