Very well shot ! In my POV, there are some secrets in this video.
(1) Shot with only main lens : Not using telephoto lens.-it sucks in cinematic mode. Because telephoto lens was not used, the result would be the same as iPhone 15 pro.
(2) The model is wearing a hat : because software bokeh has trouble in hair edge.
(3) To get a shallow Depth of field : The subject in the foreground is as close as possible to the camera and the background is far away. The iPhone's LiDAR sensor can help express natural depth by recognizing subjects close to the camera.
(4) Filming outdoors during the day : iPhone's cinematic mode works well under the rich light. (Though the weather is rainy and cloudy, it's much better than indoors.)
(5) Raw filming + professional color correction : This is my guess. 

The iPhone's cinematic mode has several limitations yet, but this video overcame them very smartly. 👍

Cinematic mode was not upgraded, I see. The shots of the actor in the woods are pretty shaky. Last year's video was just as good. Kudos for the filmmaking though. Still if you're going to work that hard, leave the iPhone at home and take your mirrorless rig.
