Mince Pie

This is a combination of mincemeat pie (which actually has no meat) and apple pie together. It is delicious!
It is best to serve the pie the next day so the mincemeat filling is set enough to cut.

Ingredients:
1 box refrigerated pie crust (2 pie shells)
1 jar mincemeat pie filling (which contains no meat)
4-5 apples (I use Jonathan apples)
4 tbsp cinnamon sugar
Egg wash for brushing

Method:
1. Place 1 pie shell into a deep-dish pie pan. I usually blind-baked it at 400 deg. F for 10 minutes but I didn't at this time. Keep it in the fridge until needed.
2. Peel, core, and chop 1 apple.
3. In a skillet reheat the mincemeat pie filling and add chopped apple. Bring it to a boil and set it aside to cool.
4. Peel, core, and slice another 3-4 apples thinly. Then mix in the cinnamon sugar.
5. Pour the prepared mincemeat pie filling into the prepared pie shell. Then arrange the apple slices on top of the mincemeat overlapping a little bit until cover the entire mincemeat filling.
6. Unroll another pie shell. Cut the pie shell into 3/4" strips about 10 strips with a knife or a pizza wheel.
7. Weave the strips on top of the apples like a basket weave pattern. Tuck in the edges. Then brush it with egg wash. Place the pie pan on a baking tray lined with foil.
8. Bake at 400 deg. F. on the bottom rack of the oven for 50-60 minutes or until the filling is bubbling. (The liquid may overflow out of the pan.)
9. Let cool completely and chill it in the fridge for a few hours before cutting so that the mincemeat pie filling is set.
