Chicken inasal, marinated in a mixture of garlic, ginger, vinegar, soy sauce, kalamansi or key lime and brown sugar. Chargrilled basted with chicken fat oil.
Basting sauce recipe:
500 grams - chicken fat (skin with fats or butt) seasoned with salt
annatto powder
3 cloves garlic

Fry chicken fat to get the extract (oil). Then turn off the heat, pour the anatto powder mix then add the garlic. Let it cool and it's done.
