This recipe is inspired by From Kora, a Filipino doughnut shop based in New York City. Their most famous Leche Flan filled doughnuts were featured in Food Insider last December 2020.

Ingredients

Leche flan
¼ cup sugar
5 egg yolks
7 oz condensed milk
200g evaporated milk
Few drops of vanilla essence

Brioche doughnuts (Makes 10 doughnuts)
264g All purpose flour
36g vital wheat gluten
2 tbsp sugar
2 ¼ tsp instant yeast
½ tsp salt
2 eggs
½ cup evaporated milk
¼ cup butter

Flan Cream
Whipped cream
Leche Flan
1:1 ratio
