Carrot Cake Baked Oatmeal

Recipe🔽 follow for more “healthier” carrot cake recipes this week! Did I mention it's my favorite cake?

Ingredients
2 cups rolled oats
1/4 cup ground flax
1 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp cloves
1/8 tsp ginger
2 cups unsweetened vanilla almond milk
1 large egg
2 tsp vanilla extract
1/4 cup maple syrup
1 cup shredded carrots do not buy preshredded carrots
1/3 cup walnuts
1/3 cup raisins

Healthy Cream Cheese Frosting
4 ounces cream cheese *
2-3 tbsp plain yogurt *
1 tsp vanilla extract
1/4 cup maple syrup

Instructions
1️⃣Preheat oven to 375F and grease a 8 x 8 baking dish.
2️⃣Mix oats with spices and ground flax.
Add milk, egg, vanilla extract, and maple syrup to the bowl. Mix to combine well.
2 cups unsweetened vanilla almond milk.
3️⃣Fold in raisins, walnuts, and shredded carrots.
4️⃣Pour the mixture into the dish and bake for 35-45 minutes, or until set and golden brown on the edges.
5️⃣Allow to cool!
6️⃣Combine cream cheese, yogurt, vanilla extract, and maple syrup in a food processor.
7️⃣Add cream cheese frosting to carrot cake!
