If you fear raw fish, there are sushi with cooked food (like beef, tuna or salmon usually cooked using a blowtorch, or even plain pickled vegetables like cucumber or gourd).

However, raw fish is commonly eaten in coastal East Asia (so most of Japan, some cities in China, Korea). The seafood has to be freshly killed and is almost always from the ocean, because parasites that infects human usually lives in freshwater. This is essentially the same as eating fresh oysters in the west, where the seafood is only prepped just before eating, and kept alive until then.

I personally much prefer the Korean version called kimbap. The fish is fully cooked.
