Catherine found your channel recently & have been binge watching. My granddaughter & I made this delicious Mexican Bubble Up Casserole. We added a can of drained black beans & some chopped green peppers. We cut up some toppings --cilantro, tomatoes, shredded lettuce, & sour cream to give each person a chance to chose their favorite toppings to place on top of their casserole. Yum yum it was great. The filling was more than we needed so we froze it. In a couple of weeks we thawed it out, but were out of frozen biscuits. No problem--fhe filling was warned up & made a delicious Mexican soup. Served with mexican cornbread it was a big hit. We loved this recipe--two totally different meals from one recipe!

This looks great and easy. My family loves Mexican flavored dishes. I think I will try this out this week, but I will season my meat with taco seasoning, just to give it that true “taco” taste! You didn’t say, (or did I miss it?) but, does the baking dish need to be sprayed with nonstick before putting in the biscuits? I made your crockpot sweet and sour chicken recipe last night, and it was a hit with my entire family! So much so that they want to include it in our dinner rotation. Thank you so much for all the great cooking inspirations, and keep them coming!

We just got new Mexican neighbors. They are really nice. They sent us this beautiful cinnamon bread at Christmas that was the best bread of that type I have ever had! Haven't got the recipe yet but...😈 We were talking about having food together. This would be yummy. Hope they'll like it. They were talking about cerviche. I was like please no cilantro! I'm or of those peeps that thinking gates like soap. Ugh! Lol. Thank you! Lovely seeing your son. My oldest grandson likes to cook. Good. He moved away to college so he's pretty set.😉😎🌹
