I want omg. I've never had it but I love the earthiness and complexity that organ beats bring to food. My mom used the turkey guts in the gravy every year, and I used to make a traditional Italian recipe of pasta with chicken livers that was delicious. I also grew up eating liver and onions. I haven't tried kidney or tripe yet, but they're definitely on my list.

I’m Vietnamese and I absolutely love this dish as well. This among many other dishes like Pho, Bun rieu or Bun cha is my go to breakfast. So happy that you gave it a spot light here since it’s a very obscured dish compare to Pho even though it’s so popular in Vietnam. Thank you for showing our food to the world Lisa ❤️

you mentioned how these ingredients might be "foreign" to some people, but it's really interesting how similar our cuisines are. Im from the philippines and watching your mom make this just reminds me of how a dish called Lugaw is made here too. It depends on the region what meats are used, but we are no stranger to innards in our congee.

I love this dish with some kalamansi/lemon juice, soy sauce, green onions, coriander leaves, and fried garlic flakes

Lisa you gotta try it with lime and Vietnamese freshly blended Thai chili, I also eat it with Chinese breadsticks and sometimes my grandma makes homemade Vietnamese sausage for it. Also, my family typically doesn’t use organs and instead we use the pork neck bones and ribs.

In the Philippines we call it GOTO which is perfectly paired up with Tokwa’t baboy (fried crispy tofu and fried crispy pork belly). Oh and for it’s condiment, a mixture of soy sauce, vinegar, calamansi, chilies and chopped onions.

I grew up butchering sheep. My favourite meals were blood sausage (cooked in the stomach in boiling water), the large intestine wrapped with the small intestine grilled over the fire, ground baked sheep's head, fried heart and liver. So this all sounds amazing to me. I especially relate with the blood, it's so yummy.

I love the whole story. I have to be honest, I tried Congee for breakfast one and I really didn’t like it, but this looks really delicious and nutritious. People shouldn’t be afraid of organ meat. A lot of it has a strong flavour but it’s really tasty.

*We have a similar dish. Not exactly like that congee but It use Sticky rice, Beef or Pork (or chicken), Cooked like a soup. The exact procedure is nearly identical.. We call it "lugaw". That congee looks delish, My family have our recipe for lugaw and I love it*
