I have made that recipe and it has been a huge success. I use multicolored peppers and prep them the same way, but I boil the pepper for 3-5 minutes first. It softens them before placing them in the oven. I also mix the quinoa with the everything and then scoop them in. This recipe is delicious!

Interesting that you pre-roast, we've always boiled ours or put in the IP to make them soft. Might have to try this next time.
