This Rocks! My twist on this was plain extra firm tofu cut into circular egg's to fit the english muffin then I season the tofu with turmeric, smoked paprika, onion powder, garlic powder, dash of cayenne, and black salt (my go to for egg taste). I then griddle the tofu in my panini maker. Add some Veggie Lite sausage, tomato, spinach (or any greens) and top with the hollandaise. So good. thank you for all of your inventive recipes!
