I use my Weber Genesis grill to smoke w good results. My set up is similar, I remove one grate, use a bread loaf pan for water, and I have a steel box which I lay directly between the side of the grill and the vaporizer bar. I fill the box w chips, and swap out every 45 minutes for the first couple of hours. This does an adequate job getting smoke on the meats.
Based on multiple cooks, it seems this set up does best running at about 240° on my grill.

Do you not soak your wood chips in water first? I don't use gas, I cook and smoke meat over a hardwood fire/embers or charcoal in my firepit in the backyard. The firepit is made from 1/2 of a 55 gallon steel drum, and for a cover, I use an old round domed BBQ grill cover. I use a spray bottle of water and olive oil to help the meat stay moist. Love your vids, I learn a lot from them. Robert

Great heads up, Thank You, i have kept an old 3 Burner hood over BBQ for this very reason.
Now i have half an idea how to do it, thanks to you :)
Instead of choking down the Gas connection, i wonder if you just block off some of the holes on the burner?
Say with foil or perhaps nails in the holes?

Under $10 you can buy a smoker box. Several shapes and sizes available. You dont need to disassemble your bbq. Just put it in.

I will be trying this. It does seem to go against the other thoughts of starting off with a very high temp. To get the wood smoking. I tried it with the very high heat in the beginning a few weeks ago, I never achieved any smoke though. Thanks

Chips burn off very fast. They'll last less than 30 minutes before you have to refill. I do the same thing except I use chunks instead of chips. Chunks will last much longer and you wont have to keep opening the lid to add more. "If you're looking, you ain't cooking."

I'm trying a pork butt on my gas grill for the first time. These are great tips! I'm going to try these the next time around. I have a recipe I'm using and the only method for the chips I can use ( at my disposable ) is the heavy duty foil with soaked applewood chips. My grill has side by side burners so I put the chips on the left side. I put a disposable pan underneath the top grid on the right. I'm not sure how else this would work. The recipe I have also calls for pulling it off mid-way thru cooking and place in a disposable pan with apple juice and covering with foil. Do you have any thoughts on this? Or will I achieve the same moist tender meat with out it?

Thanks! You just saved me from spending time and money on a smoker. You do not mention soaking the chips prior to use, this is the first I've heard of that. Most smoking I've seen on You Tube and the Food Network have you soak the chips in water for at least 2 hrs.

Why don't you soak you chips in water? I have found it to provide more smoke for longer. Otherwise this is a great method for those who are limited by equipment and not by potential 😀
