They are very popular in Spain, we eat them soaked in water or we make a drink called "horchata" that we drink very cold with ice in summer. This horchata is different from the Mexican version, is just like the vegan milks

Fun fact about tiger nuts, scientific name (Cyperus esculentis): they belong to the same genus as the papyrus plant (Cyperus papyrus), from which Ancient Egyptians made one of the earliest forms of paper.
