RAGDA PATTICE
Ingredients:
For the ragda-
1 cup white peas, soaked
Salt, to taste
3 tbsp oil
1 tsp cumin seeds
Asafoetida, a pinch
¼ tsp turmeric powder
¼ tsp red chilli powder
¼ tsp chaat masala
¼ tsp coriander powder
¼ tsp cumin powder
¼ tsp fennel powder
1 tsp garam masala
For the pattice-
3 potatoes, boiled and mashed
2-3 green chillies, finely chopped
½ cup bread crumbs
½ tsp turmeric powder
¼ tsp red chilli powder
¼ tsp chaat masala
¼ tsp coriander powder
¼ tsp cumin powder
¼ tsp fennel powder
¼ tsp asafoetida
Salt, to taste
Chopped coriander leaves
Oil, for shallow frying
For the assembly-
½ cup spicy green chutney
½ cup sweet dates and tamarind chutney
½ cup onions, finely chopped
½ cup fine sev
Finely chopped coriander leaves
½ cup fried chana dal
Method:
For the Ragda-
1. In a pressure cooker, take 1 cup soaked white peas.
2. Add 1½ cup water and a pinch of salt and cook for 5-6 whistles over medium high heat.
3. Set aside
4. In a kadai, take 3 tbsp oil.
5. Once the oil heats, add 1 tsp cumin seeds and a pinch of asafoetida.
6. Allow to splutter.
7. Add the cooked white peas and mix.
8. Add all the dry spices- ¼ tsp turmeric powder, ¼ tsp red chilli powder, ¼ tsp chaat masala, ¼ tsp coriander powder, ¼ tsp cumin powder, ¼ tsp fennel powder and salt to taste.
9. Mix well, add little water if the consistency is too thick.
10. Add 1 tsp garam masala and mix well.
11. Let it boil for 3-5 mins. Set aside.
For the pattice-
1. In a bowl, take 3 boiled and mashed potatoes.
2. Add 2-3 finely chopped green chillies and 2 tbsp bread crumbs.
3. Add ½ tsp turmeric powder, ¼ tsp red chilli powder, ¼ tsp chaat masala, ¼ tsp coriander powder, ¼ tsp cumin powder, ¼ tsp fennel powder, ¼ tsp asafoetida and salt to taste.
4. Add chopped coriander leaves.
5. Mix well, to form a soft dough.
6. Take a portion of the dough and form a ball.
7. Flatten and give a patty shape.
8. Coat these patties in bread crumbs.
9. In a pan, take sufficient oil and shallow fry the patties till golden brown on both sides.
For assembly-
1. In a plate, place 2 patties.
2. Add the ragda on top.
3. Add spicy green chutney and tamarind dates chutney based on your flavour preference.
4. Garnish with finely chopped onions, fine sev, chopped coriander leaves and fried chana dal.
5. Enjoy!
