Ainsley's Mediterranean Cookbook is Ainsley's new series on @itv Journeying through Spain, Sardinia, Morocco, Corsica and Jordan, Ainsley shows how easy and enjoyable it can be to make fresh, healthy, delicious meals.
In Episode 2 Ainsley continues to explore Corsica, the isle of beauty and his travels have brought him to the medieval fortress town of Bonifacio where he learns about the history and culture of this incredible place before whipping up some cheese and walnut stuffed aubergines in his stunning outdoor kitchen overlooking the harbour. After visiting a local honey producer he makes honey glazed pan roasted figs served with a Corsican charcuterie platter.
Ainsley meets a rugby player turned olive oil maker as he samples his much sought after oil and procures the last bottle in stock to use in his stunning fish stew with homemade garlic mayonnaise.

Mr Harriot is phenomenal chef..I believe one ov Europe's underrated chefs in my opinion top 5 in Britain he keeps getting better better..his passion and love for cooking is fantastic he keeps it as simple possible lots colour

I bought this cookbook. Fabulous! I‘m become vegan recently, so now I’m working on veganizing the recipes. I hope Ainsley Harriott writes a vegan cookbook soon- maybe even collaborate with Gaz Oakley. What a fantastic pair they would be!
