Super Messer, vor allem mit Holzgriff. Schärfe meine Messer mit dem Tormek T1. Die Klinge wird an der Diamantscheibe geführt, der Winkel kann gradgenau eingestellt werden. Wenn man ein (Felix)Messer gut behandelt, ist das eine Investition fürs Leben, ebenso wie ne gute Eisenpfanne.

Also dass japanische Messer nur einseitig geschliffen sind, ist völliger Blödsinn. Es gibt einseitig geschliffene japanische Modelle, z.B. einige Honesuki- oder Deba-Modelle, aber die überwiegende Mehrheit der japanischen Messer hat einen beidseitigen Schliff.

Hey, super erklärt mit dem Schleifen. Ich bin mittlerweile auch stolzer Besitzer des ein oder anderen Felix Messers aus der Serie Sirius. Das ist ja Damaststahl. Schleift man die genauso wie hier gezeigt also mit 15° ?

Most likely have them for life
There had heaps of prep work done with them, and two of my favourites
Sturdy thick, and slices so nice when smashing out bags of Onions, tomatoes, strong and great when you want a break from a larger knife
Only thing is there got a habit of standing up on there spine, if you place it down fast, the blade exposed, I'm use too it but I could see someone slicing there hand open if not aware, of this quirk,
How many times I have put them down fast, come back and their standing up, the handle is flat on the back, it seems to find balance on the spine if dropped or place down fast, you need too be aware of them
Outside that I enjoy them greatly,

The only knifes I have that do this
But I'm use too it, others working around you may not, I'm always telling people beware of these there got a habit of standing up.
