This vegan sweet potato casserole is a simple and delicious make-ahead Thanksgiving classic side dish or dessert. The sweet potato bake is topped with a delicious pecan streusel topping which is gluten-free, dairy-free, egg-free (without sacrificing flavor!). 😍

Ingredients:
2 pounds (900 g) sweet potatoes (about 3-4 large potatoes)
1/3 cup (70 g) coconut sugar or brown sugar
1/3 cup (80 ml) canned coconut milk
1 tsp vanilla extract
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp sea salt
Topping:
3/4 cup (100 g) gluten-free all-purpose flour
3 tbsp (40 g) coconut sugar or brown sugar
1/2 tsp cinnamon
1/4 tsp sea salt
3 tbsp (40 g) vegan butter or coconut oil (softened)
1 - 1 1/2 tbsp maple syrup
2/3 cup (75 g) pecans chopped
