If you want to explore Mexico’s street vendors you should do it with someone who speaks the language.I’m Mexican and I have been living in the USA for the last 30 years. I took two friends to Mexico City..one white one black and both fell in love with the street food. My white friend fell in love with a girl eating at a taco stand and he ended up proposing to her a year later…now my black buddy has his eyes fixed on the taco stand owner’s daughter…both thank me to no end for translating…I’ll never tell them I spiced things up a bit while translating….lol

It's not flat bread bro, almost everything is made of "masa de maíz" same stuff used to make Tortillas for the tacos, think of it as a fat tortilla, once you put it in the pan (flip each side) you get a nice crusty "fat tortilla" now you just cut it by the half by introducing the tip of a knife and rotating the "fat tortilla" but make sure you left a part uncut so you can use it as a bag made of masa for your stuffing, this same principle is used for food like Gorditas, Bocoles, etc.
