I use a non stick Parchment, melt the cheese then place a deep fried Taco Shell on the cheese flip it over and keep on going. Then tuck in the ends, remove the parchment and add the filling.

Ever since I had birria, years ago, I've been playing around with it. Haven't tried the Taco Bell version and won't. Funny thing is, there's a taco truck that parks across the the street from TB on Friday nights. They make a queso birria taco. Had to try it. Spot on to what I've been making. And what you just did. Try adding a little of your favorite hot sauce to the consume. Delicious!
