I made this years ago and loved it...don't know why I haven't made it recently, thanks for the video reminding me of it....On a side note your recipe got me to wondering that as a leavened 'quick bread' it contains no yeast however I wondered if the addition of yeast would improve or give it more of raised bread flavor profile ala non-risen pizza dough which contains yeast to enhance the flavor but not given the time to rise. Store bought pizza dough packets include dry yeast in their ingredients but are rolled out and cooked immediately after mixing....In researching this topic I got somewhat contradictory response's from AI generated search results saying " (No), adding yeast to a traditional soda bread recipe would not be considered and another saying " (Yes) Yeast is added to pizza dough even if it isn't given a rise time because it still contributes to a slight rise during baking, as well as developing flavor in the dough, even with a shorter fermentation period; Without yeast, the pizza 'Would be Flat and Lack the characteristic bread-like texture and taste'...."
I think I'll make some anyway for a taste test ....one with and one without as always for your videos and apologies for the lengthy post apparently my curiosity got the best of me today :)
