Firni is a traditional South Asian dessert made with rice powder, milk, sugar, and flavored with cardamom, saffron, and sometimes rose water.
Ingredients:
- 1/2 cup rice powder
- 4 cups milk
- 1/2 cup sugar (adjust to taste)
- 1/4 teaspoon cardamom powder
- 1/2 cup almonds (soaked and peeled)
- Chopped nuts for garnish (e.g., almonds, pistachios)
Instructions:
1. In a bowl, mix the rice powder with a little water to make a smooth paste. Set it aside.
2. In a saucepan, heat the milk over medium heat until it comes to a gentle boil. Stir occasionally to prevent the milk from sticking to the bottom of the pan.
3. Once the milk is boiling, reduce the heat to low and gradually add the rice powder paste while stirring continuously. This will help prevent lumps from forming.
4. Add the sugar, cardamom powder, and saffron strands to the saucepan. Continue to cook the mixture on low heat, stirring frequently to ensure it thickens evenly.
5. Cook the firni until it reaches a thick, custard-like consistency. It should take about 15-20 minutes.
6. Once the desired consistency is reached, remove the saucepan from the heat and let the firni cool to room temperature. It will thicken further as it cools.
7. Once cooled, pour the firni into individual serving bowls or a large serving dish.
8. Garnish with chopped nuts such as almonds and pistachios. You can lightly toast the nuts beforehand for added flavor.
9. Place the firni in the refrigerator for a couple of hours to chill and set.
10. Serve the firni cold as a refreshing dessert.
