Moist Keto Red Velvet Cake with Cream Cheese Frosting 🍰

Ingredients

Preheat your oven to 180c
Prepare and grease two round sandwich tins with butter

220g Almond flour
135g Powdered Erythritol
2tbsp cocoa powder
2tsp baking powder (grainfree + glutenfree)
1/2 tsp baking soda
2 large eggs
1/2 cup + 1 tbsp whole or full fat milk (subs: coconut milk)
3 tbsp extra virgin olive oil
1 tbsp Bragg organic Apple cider vinegar
1 tbsp Vanilla flavour stevia drops (subs: vanilla extract try n find a sugarfree one)
1-2 tsp gel red food colouring

*Baking time: 20-25mins (Basic rule applies here, get a toothpick and if it comes out clean then it’s done.

*Set aside to cool

Frosting 😜

Make sure your cream or soft cheese and butter are room temperature for better texture 🙌🏻

225g full fat philadelphia cream cheese
2 1/2 tbsp Kerrygold grass fed butter (I scooped the butter out of the packet so pls do not heat your butter in the microwave)
1 cup powdered erythritol (you can add a bit more if sweetness isn’t enough for you)
2 1/2 tbsp whole or full fat milk
1 tsp Vanilla flavour stevia drops (subs: sugarfree vanilla extract)
1/8 salt

Sometimes frosting can be runny because of sugar. No worries! You can add xanthan gum 1tsp at a time 😀 then keep mixing your frosting and if you are happy with the consistency then stop adding some more.
