The "carcass" always becomes a chicken salad sandwich for me, and the bones get frozen and saved for stock.

In french the oyster is called "Sot-l'y-laisse" which translate to "fool leaves it there", yep it is that good.

I wouldn’t pop the thigh out like that. It’s hard to explain but I cut across the spine to detach the lower body from the upper body. Then I seperate the two thighs. The oyster is attached to the thigh.
