I had a customer come into the store I worked for asking for something we didn't have in stock. I told them that I had seen the same item in a different store and a rough price estimate. After they left, another clerk cornered me and demanded "Why did you send them away, we lost a sale!" - "We weren't going to make a sale, we didn't have what they needed. What I did is make a customer. The next time she needs something, she is going to come here first because she knows we care about what she really needs and not just a bottom line."

That's how you retain good customers. Communication like he demonstrated is the key. I'll happily wait for my meal, especially if you let me know ahead of time that it's going to take longer than normal.

I was serving a two level cafe by myself while making coffees as well. I would literally tell people how short staffed we were and make a quick joke: people appreciated the honesty. They can also see how busy the restaurant is like

It costs the restaurant maybe $1.00 for those 2 salads, extra bread, or cups of soup. But the customers left there happy with the service and willing to come back again to spend $50+ a plate.

He is absolutely right. As a customer, I 100% want to know up front if the kitchen is shortstaffed or has other emergencies going on. I don't even need the free soup or whatever; I just need to know it's going to take that extra hour before I eat if I choose to stay, or if I need to go somewhere else to take care of low blood sugar and come back another night for a better experience.

Soups and salads materials are some of the things most tossed out at the end of the night. They are incredibly cheap and their price is like 80% profit. So handing someone a free item that has your lowest food cost is just an easy win.

A good manager would be the one on the floor talking to the customers and handing out free/cheap items to get them to stay and maybe spend a bit more on dinner than they were perhaps planning.

I managed a restaurant and being open honest and direct with customers is definitely the best way to keep them happy and content, even when things aren't running smoothly.

I've turned irate customers into loyal regulars using the same tactic as Mr White here
