I build a skin-on-frame dinghy in my parents garage in NC. The dinghy will be 7ft when complete and disassembles into two nesting pieces.

Yeah...one of the most important aspects of any boat build is the building location.
Ideally you should choose a site whose travel time is halfway between Harbor Freight and Home Depot.
This will cut construction time by 40-60%.

Hey Sam, I'm building a nesting dinghy, it's my design but only 1/10th in cardboard! The trouble with nesters is they get tall when stacked, but your Stasha doesn't (good for a 28') though they do look a little strange in the water, maybe that's something for the eye to get used to. Looking forward to the finished result!

When you buy tools and stuff from Harbor freight save the boxes and receipts so they can refund your money or replace them when they break

White oak is non-porous andmuch better than red but, not available at your 'local' lumber yards. Did you know that when Red oak is freshly cut, you can take a short length of it (maybe a foot long) and blow bubbles in water with it? True! Also, once kiln dried, it removes some of the wood's ability to reabsorb moisture. For bending, it is best to start with 'green' wood. And, you are correct, the direction of the grain was another part of the problem. Your solution was a very good one which should result in an even stronger final product.
