The One With The Jennifer Aniston Salad Recipe!

This is my take on the famous Jennifer Aniston salad recipe! Since filming this, Jennifer has debunked the myth that she ate this salad on the set of Friends everyday, for 10 years. However all I can say is, Jennifer has been missing out! This salad is healthy, so delicious, and I’ve made it several times since!
You can easily make this Jennifer Aniston salad recipe vegan by omitting the feta cheese, and if you still want that briny salty flavor, add olives instead! You can also make this salad gluten free by substituting the bulger wheat for quinoa!
As with all salads, feel free to customize this recipe as you wish! If you don't like a particular vegetable, leave it out! If you have some tomatoes laying around, add them in!

INGREDIENTS
200g (1 cup) bulger wheat, uncooked
120g (1 cup) cucumber
52g (1/2 cup) red onion
30g (1/2 cup) parsley
8g (1/4 cup) mint
250g (1 cup) feta cheese
425g (15oz) chickpeas
50g (1/2 cup) pistachios
60ml (1/4 cup) lemon juice
30ml (2 tbsp.) olive oil
salt and pepper to season
Serves 4 people generously!
