This looks so tasty! Although I'm unsure about bringing the chicken to room temperature before cooking. It's allowing the chicken to sit in the danger zone (40F to 140F) for too long, which promotes the growth of dangerous bacteria. Even if it cooks unevenly, it's better safe than sorry.

MMMM just made this for dinner! I used farro for the salad bc that is what I had on hand and it worked! Chicken was amazing, I didnt have time to make the humus though but im sure that would have been good as well
