INGREDIENTS

1 ½ lbs Gala apples, (about 5 large apples), cored and cut into 1-inch pieces
½ cup apple cider, apple juice or water
¼ cup granulated sugar
1 lemon, juiced
½ cup packed light brown sugar
¼ teaspoon ground cinnamon
½ teaspoon Diamond Crystal® Kosher Salt
⅛ teaspoon ground cloves

DIRECTIONS

Heat apples, apple cider, sugar and lemon juice in large pot or saucepan over medium-high heat.
Bring mixture to simmer, then reduce heat to medium-low. Cover and cook until apples are soft, about 20 to 25 minutes.
Remove from heat and puree apple mixture, using an immersion blender or food processor, until smooth, about 1-2 minutes.
Return puree to saucepan over medium-low heat. Add brown sugar, cinnamon, kosher salt and cloves and stir until sugar is completely dissolved. Bring mixture to gentle simmer and cook, stirring constantly, until puree reaches a dark caramel color and leaves a clear trail when stirred, about 45-60 minutes.
Remove from heat and allow apple butter to cool completely. Store in an air-tight jar or container.
Tip: Apple butter can be made in a slow cooker. Simply add ingredients to bowl of slow cooker,
cover and cook on high for 5 hours or low for 8-10 hours. Puree until smooth. Enjoy!
