I would have thrown the jam in a blender with the water to chop into smaller pieces. But great job Beaver, looks delicious!

I tried my take on this recipe around the same time you posted the 1st video. Bottled it last night and it was to strong (abv wise). Added about 100ml of water to each 1lt bottle and it improved the taste remarkably. The abv is lower but it makes more drinkable. I'll try adding jam for the next batch!

My brew has been sitting for 5 days in plastic bottles and not the slightest sign of fizz! Great flavor, clarity etc, but not fizzing. Any ideas. Do you think it could just be because of the cold weather here in Cape Town? Did the bentonite and jar of jam. Sg was .998 before adding the jam. Great taste.

Oh, and my license to own and use a still for personal use has just been issued from SARS so your brandy next on my to do list. Ketelkraal shipping my Kentucky still tomorrow. Looking forward to trying that brandy recipe.
