Easy Carrot Fries – even your kids will love!

Hi I’m Jacqueline! Registered Dietitian Nutritionist, this is your home for quick, easy, healthy meal ideas and expert food shopping tips!

Carrot “fries” are an easy, fun way to get more vegetables in your diet. In this video I show you how to prepare them along with a tasty dipping sauce prepared with Greek yogurt.

Prep: 5 minutes
Bake: 15 minutes
Ingredients:
 3 to 4 Large Carrots, peeled
 1 Tbsp Olive oil
 Salt & Pepper
 1 tsp Garlic powder
 1 tsp Paprika
 1 Tbsp parmesan cheese
Greek yogurt Dipping sauce
 1/2 cup Plain Greek yogurt
 1 large Garlic clove, minced
 Salt & pepper
 1 tsp chopped fresh dill
 Sprinkle of paprika

Directions:
1. Preheat oven to 450 degrees.
2. Line a baking sheet with aluminum foil and coat with cooking spray.
3. Cut carrots into thick strips. Toss with olive oil and all spices. Bake for about 10 minutes.
4. Sprinkle with parmesan cheese and bake for an additional 5 minutes or until crisp.
5. For dipping sauce: Combine all ingredients in a small bowl, stir to combine and refrigerate until read to enjoy.
